The Wizarding World of Harry Potter at Universal Studios has a Wizarding World Frozen Butterbeer. I can’t wait to try it when we visit for my birthday trip. This Frozen Butterbeer was so yummy and cooling on a hot summer day. The butterbeer ice cream is fantastic alone or you can swirl butterscotch topping into it, but turning it into Frozen Butterbeer is the best!

Frozen Butterbeer inspired by the Wizarding World of Harry Potter at Universal Studios.


Butterbeer Ice Cream

  • 1 1/2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 cups heavy cream
  • 1 tbsp. butter extract
  • 1/2 tbsp. vanilla extract

Butterscotch Simple Syrup

  • 1 cup brown sugar
  • 1 cup water
  • 2 tsp butter extract
  • 1/4 tsp salt


  • 1/4 cup cream soda, cold
  • 3/4 cup seltzer water, cold
  • 2 tbsp. Butterscotch Simple Syrup


Butterbeer Ice Cream

  1. In a medium mixing bowl, use a hand mixer on low speed to combine the milk and sugars until the sugars are dissolved, about 1 to 2 minutes.
  2. Stir in the heavy cream and vanilla and butter extracts.
  3. Pour the mixture into freezer bowl, turn the machine on and let mix until thickened, about 20 to 25 minutes.
  4. Transfer to freezer safe bowl. Put in freezer for about 2 hours.
  5. Remove from freezer about 15 minutes before serving.

Butterscotch Simple Syrup

  1. In a small saucepan, combine 1 cup sugar and 1 cup water. Heat to a boil, then reduce to simmer for 10 minutes. Remove from the heat. Add butter extract and salt. Let cool completely.


  1. For each serving, pour 2 tbsp. Butterscotch Simple Syrup in a glass and add 3/4 cup cold Seltzer Water plus 1/4 cup cold Cream Soda. Serve immediately.

Frozen Butterbeer

  1. Scoop Butterbeer ice cream into a frosty mug. Pour Butterbeer over the ice cream. Stir to combine.
