Ursula Blackberry Yogurt Mousse Cake is inspired by Ursula, The Sea Witch, from The Little Mermaid. This almost no-bake yogurt mousse cake is very easy to prepare and looks amazing. In addition, the Greek yogurt is an incredible ingredient for light mousse recipes resulting in a lighter and healthier dessert.

I had so much fun putting together this recipe. I arranged the blackberries to resemble Ursula’s tentacles and then made a golden seashell to represent the shell pendant she wears to capture Ariel’s voice. I think it turned out just perfect, I definitely get Ursula vibes!

Since Ursula’s colors are black and purple, I used food coloring to make the vanilla yogurt mousse black and the natural color of the blackberries for the purple. When you take a slice of the mousse cake, you can see all the swirls of color. The blackberries were not quite as purple as I hoped but I still think it looks amazing.

Ursula Blackberry Yogurt Mousse Cake
Ursula Blackberry Yogurt Mousse Cake is inspired by Ursula, The Sea Witch, from The Little Mermaid. This almost no-bake yogurt mousse cake is very easy to prepare and looks amazing. Ingredients
Chocolate Graham Crust
- 1 packet (5 1/2 oz.) chocolate graham crackers
- 1/4 cup sugar
- 6 tbsp. butter, melted
Blackberry Yogurt Mousse
- 12 oz. frozen blackberries
- 1/3 cup granulated sugar
- 1 tbsp. lemon juice
- 2 1/4 tsp gelatin powder
- 3 tbsp. cold water
- 3/4 cup Greek yogurt
- 3/4 cup heavy whipping cream, chilled
Vanilla Yogurt Mousse
- 1 cup Greek yogurt
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 1/4 tsp gelatin powder
- 3 tbsp. cold water
- 1 1/4 cup heavy whipping cream, chilled
- Black gel food color
Blackberry Jelly
- 5 oz. frozen raspberries
- 2 tbsp. sugar
- 1 tsp. gelatin powder
- 1 tbsp. water
For decorating
- Fresh blackberries
- chocolate shells
- Gold luster dust
Instructions
Chocolate Graham Crust
- Place the graham crackers, melted butter and sugar into the bowl of a food processor and crush until you have moistened crumbs.
- Press the mixture into the bottom of a springform pan using the back of a spoon.
- Bake at 350 degrees for 7 to 9 minutes. Let cool completely.
Blackberry Yogurt Mousse
- In a small saucepan add blackberries, sugar and lemon juice and bring to a boil over medium-high heat, stirring constantly. Simmer for about 10-15 minutes or until thickens. Remove from heat and set aside until cool and ready to use.
- Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. In microwave, heat the gelatin in 15 second increments, stirring between each heating to dissolve gelatin completely. If any gelatin remains undissolved, remove it before adding to the blackberry puree. Stir the gelatin into the puree to combine. Add to the yogurt and mix to combine.
- In another bowl mix chilled whipping cream until stiff peaks form. Gently fold the whipped cream into the blackberry yogurt mixture. Set aside until ready to use.
Vanilla Yogurt Mousse
- Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes.
- Meanwhile in a bowl mix yogurt with vanilla extract and powdered sugar.
- In microwave, heat the gelatin in 15 second increments, stirring between each heating to dissolve gelatin completely. If any gelatin remains undissolved, remove it before adding to the yogurt mixture. Mix to combine.
- In another bowl mix chilled whipping cream until stiff peaks form. Gently fold the whipped cream into the yogurt mixture.
- Stir in black food color and stir until fully incorporated.
Prepare cake
- Alternate spoons of blackberry yogurt mousse and vanilla yogurt mousse until all filling is done.
- Tap the pan on a towel on the counter a few times to smooth the top.
- Refrigerate the cake until the blackberry jelly is ready.
Blackberry Jelly
- Dissolve gelatin in 1 tbsp. cold water and let it swell for about 5 minutes.
- Place blackberries and sugar in a small saucepan and place over medium heat, bring to a boil and cook for 2 minutes. Remove from heat and sieve to remove seeds.
- Dissolve gelatin over low heat and pour over blackberry sauce and mix to combine.
- Spread the jelly over the top of the cake.
- Refrigerate the cake for at least 4-6 hours or overnight, to set before serving.
- Decorate with fresh blackberries and chocolate shells. Enjoy!
