This month’s Food ‘n Flix Club Challenge movie was Planes, Trains and Automobiles. I have never seen this movie, even though I am an 80’s kid and watched many John Hughes films. This one did have a unique style, and maybe that is why I missed it in the past. It is a crazy adventure of two strangers making their way home for Thanksgiving. I decided to make Thanksgiving Ambrosia Salad inspired by the airport rental car clerk who is chatting on the phone with her family members about their Thanksgiving dinner plans while she has an enormous line of people waiting for her to help them.

The clerk discusses different items family members are bringing to the dinner and states she will be bringing Ambrosia as they know she cannot cook. I thought it was a great idea to have a Thanksgiving salad that is simple and easy to prepare amongst all the other menu items that require so much prep or the oven. I know we never seem to have enough oven space for all the things included in our dinner menu.

The movie starts with a business man trying to get home to Chicago after a business trip to New York. There are a series of events causing him to take all sorts of various transportation, thus the title. The entire time I’m watching it I’m thinking “That would never happen” or “Why would you….” But it’s supposed to be over the top nuts. I didn’t find it as funny as I had hoped given Steve Martin and John Candy are the stars, but it is entertaining and felt like a great way to kick off the Thanksgiving season.

Thanksgiving Ambrosia Salad Recipe

Thanksgiving Ambrosia Salad

Thanksgiving Ambrosia Salad inspired by Planes, Trains and Automobiles. A simple and healthy side dish for your Thanksgiving dinner plans.

Serves: 8 servings
Ingredients
Salad
  • 5 Tangerines, peeled and separated or canned tangerine slices
  • 20 oz. can pineapple chunks, drained
  • 1 tbsp. honey
  • ¼ cup flaked coconut
  • 8 oz. yogurt, banana cream
Topping
  • 1 banana, cut in slices
  • ¼ cup flaked coconut
Instructions
Salad
  1. Combine all ingredients in a large bowl, and stir gently. Cover and chill at least 8 hours.
Topping
  1. Just before serving, cut one banana and stir into the salad. Sprinkle ¼ cup flaked coconut on top. Serve immediately.
