Star Wars Scarif Salsa is inspired by the tropical planet, Scarif, from Rogue One. I thought this was one of the most beautiful locations in the Star Wars Universe, too bad it’s the site of such a sad story. This tropical location inspired me to create a Star Wars recipe that included that tropical feeling. I imagine this would be a welcome snack for those stationed at this location.

I had never made a tropical salsa before making this one but I’ve tried quite a few so I knew the flavors I wanted to include, and mango had to be the star. Most of the salsa feels very traditional, with tomato and jalapeno and onion, but the addition of the peach and mango transform this into a new experience, something slightly sweet yet spicy. It’s super easy to pull this recipe together too, basically chop all the ingredients up, toss together in a bowl, let it rest in the refrigerator so the flavors can combine and mature and then serve! I hope you will enjoy this as much as we do.
