Many years ago Disneyland introduced a celebration of Star Wars called Seasons of the Force. During this event, they had themed food served at the Galactic Grill. One of the menu items was The Pastry Menace, described as an “Éclair with milk chocolate filling and a hint of cayenne pepper”. This dessert has since been seen at the Star Wars: A Galactic Spectacular Dessert Party at Disney’s Hollywood Studios. These eclairs are colorful and fun, reminding us of Darth Maul. I decided to take a semi-homemade approach and use a boxed chocolate pudding for the filling, making this a quick and easy dessert.

Ingredients

Choux pastry

  • 1 cup water
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 4 eggs

Filling

  • instant chocolate pudding mix
  • ingredients from box to make mix
  • 1 tsp. cinnamon
  • pinch cayenne pepper

Glaze

  • 1 cup powdered sugar
  • 1/4 tsp. vanilla extract
  • 2 tbsp. milk
  • red and black food coloring
  • slivered almonds

Instructions

Choux pastry

Preheat oven to 400 degrees.

Heat water and butter to a rolling boil. Add flour; stir vigorously over low heat about 1 minute or until mixture forms a ball. Remove saucepan from heat.

Beat in eggs until mixture is smooth.

Fill piping bag with the batter. Pipe lines of batter to make eclairs. Bake 40 minutes or until dry and golden color. Cool, cut off tops and remove filament if needed.

Filling

Mix together ingredients according to instructions on pudding box. Add cinnamon and cayenne pepper and mix well. Cover with plastic wrap touching the pudding and refrigerate until needed.

Glaze

Combine the powdered sugar and milk together in a small, shallow bowl and stir until smooth. Divide the glaze into two bowls, 2/3 for red and 1/3 for black. Drop one drop of red food color into the glaze and stir until combined. Add more color as needed. Repeat for black until desired color.

Assemble

Add filling to the eclairs.

Dip the tops of each éclair into the red glaze. Taking a knife, drag black glaze lines across the éclair on the short side. Then drag the black glaze through all the short lines in one long line to create the drag effect.

Add slivered almonds on top of the éclair.

Serve immediately.
