My Pomegranate Panna Cotta is inspired by Charlie Brown’s Thanksgiving. This is a wonderful holiday movie that I enjoy watching every year.
In the movie, Charlie Brown hosts several friends who invited themselves over to his house for Thanksgiving dinner. Not knowing how to make a full Thanksgiving dinner, he enlisted the help of Linus and Snoopy to put together a meal. The meal consisted of jelly beans, pretzel sticks, buttered popcorn and sliced toast. There is also a tall glass filled with something pink with whipped cream on top. It is not completely clear what this item is in the movie, but I interpreted it as Jell-O as I figured that would be a simple thing kids would know how to make. My spin on it is a Pomegranate Panna Cotta, which is a little more sophisticated but quite simple to put together.
Pomegranate Panna Cotta Recipe
- ⅓ cup pomegranate juice, not from concentrate
- 1 envelope unflavored gelatin
- 2 ½ cups heavy cream
- ½ cup sugar
- 1 pinch salt
- 2 cups pomegranate juice, chilled
- 1 envelope unflavored gelatin
- ½ cup whipping cream
- 1 tbsp. powdered sugar
- cookie straws
- Pour juice into a small bowl and stir in the gelatin powder. Set aside
- In a saucepan, stir together the heavy cream, sugar and salt, and set over medium heat. Bring to a full boil, watching carefully, as the cream will quickly rise to the top of the pan. Pour the gelatin and juice into the cream, stirring until completely dissolved. Cook for one minute, stirring constantly. Remove from heat and pour into six to eight individual transparent glass dishes.
- Cool the dishes uncovered at room temperature. When cool refrigerate for at least 4 hours.
- Pour gelatin over 1 cup cold juice in a large bowl; let stand 5 minutes. Heat 1 cup juice in a microwave safe dish at high for 2 to 3 minutes or until scalding hot; pour over gelatin mixture, stirring until dissolved. Pour half of the mixture over the set panna cotta, leaving 1 cup to make the gelatin foam. Refrigerate at least 15 minutes.
- While gelatin chills, place bowl with remaining gelatin mixture in a larger bowl filled with ice water. Vigorously whisk mixture until it becomes dense, pale-pink foam and no liquid remains, about 10 minutes. Evenly divide foam among the glassed. Chill 2 hours or until ready to serve.
- When ready to serve, whip cream until stiff, adding powdered sugar toward the end. Top each panna cotta with a dollop of whipped cream and one cookie straw. Serve.
