Pizza Bites from the United States of America is a perfect bite size treat for your afternoon tea. This is the third recipe I’m sharing for our Red, White and Blue tea party in celebration of the Olympics for Summer Games Week. I selected countries that had Red, White and Blue in their flags.

While the origins of pizza come from Italy, that is really more of a flatbread or a margarita style pizza. America has taken this Italian dish and really made it their own. I believe American’s also eat more pizza than any other nation, but I’m not 100% sure, it might just feel like we eat more pizza than anyone else. 🙂

I promised to share more about our local Olympian! Our local Olympian is Bryce Mefford. He qualified to swim in Tokyo for the 200 backstroke event. My oldest swam with Bryce quite a bit including attending the California State High School championships and swimming a relay with him. As I mentioned in the last post, having such amazing swimmers has allowed my kids some opportunities they may not have otherwise had, and that was one of them.

We wish Bryce the best in his event and will be cheering him on as he takes on this fantastic accomplishment. Bryce is a wonderful young man who has always been kind and gracious to everyone. Please join us in cheering him on!

Pizza Bites

Yield: 24 mini pizzas
Prep Time: 15 minutes
Cook Time: 20 minutes
Additional Time: 1 hour
Total Time: 1 hour 35 minutes

Pizza Bites are perfect appetizers or savory dish as part of an afternoon tea party.


  • Homemade or store bough pizza dough
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup pizza sauce
  • 1/2 cup pepperoni, chopped
  • other toppings of your choice


  1. Preheat oven to 450 degrees.
  2. Make the pizza dough. Roll flat onto a non stick surface.
  3. Using a star cookie cutter, cut pizza dough into stars. Place the dough onto parchment lined baking sheets.
  4. Top each star with cheese and pepperoni. If desired, you may add other toppings.
  5. Bake for 15 to 20 minutes, until cheese is melted and dough is golden brown.
  6. Remove from oven and transfer to cooling rack. Repeat until all pizza bites have been baked.
  7. Serve immediately while hot.


I use the King Arthur Baking Pizza Dough recipe.

If desired, dough can be prepared the night before and left in the refrigerator after the first rise. Be sure to remove the dough from the refrigerator and let is warm up until slightly puffy before rolling the dough.

You can freeze the dough once lightly cooked, about 10 minutes of baking time. The dough can remain frozen up to 3 months. To use the frozen dough, remove from the freezer and thaw to room temperature. Add toppings and bake until fully cooked.
