March 14th is the day we mark as #PiDay (3.14). To celebrate #PiDay, I made Key Lime Pie. I selected this pie for a number of reasons. I’m hosting a Lego Movie challenge with #FoodNFlix and the pies from Lego sets are typically cream pies. I also looked at pies from Disney and Key Lime stood out as this is popular in Florida. Lastly, I absolutely LOVE Key Lime Pie.
Key Lime Pie Recipe
The pie is actually quite simple to make. To make the graham cracker crust, crumble the graham crackers in a food processor. Add the sugar and melted butter and process until combined. Press the graham cracker mixture into the bottom and up the sides of a pie plate. Bake the crust for 8 minutes. While the crust is baking, whisk the sweetened condensed milk and key lime juice together. Pour into the pie crust. Last, using a stand mixer, whisk the egg whites and cream of tarter together. Slowly add the sugar until soft peaks form. Using a spatula, spread the meringue over the pie filling and bake.

Ingredients
Graham Cracker Crust
- 5 ½ oz. (1 packet) graham crackers, crushed
- 6 tbsp. butter, melted
- ¼ cup sugar
Key Lime Pie Filling
- 2 (14 oz.) cans sweetened condensed milk
- 1 cup Key Lime juice
Meringue Topping
- 2 egg whites
- ¼ tsp. cream of tarter
- 2 tbsp. sugar
Instructions
Graham Cracker Crust
- Crush graham crackers in food processor. Add sugar and melted butter and pulse until completely combined.
- Firmly press crumb mixture evenly in the bottom and up the sides of a 9-inch pie plate.
- Bake crust at 350 degrees for 8 minutes.
Key Lime Pie Filling
- Whisk together sweetened condensed milk and Key Lime juice until combined. Pour into baked crust.
Meringue Topping
- Beat egg whites and cream of tarter at high speed with electric mixer until foamy. Add sugar gradually, 1 tbsp. at a time, beating until sugar dissolves and soft peaks form. This should take about 4 minutes.
- Spread meringue over key lime pie filling.
- Bake at 325 for 25 to 28 minutes. Chill 8 hours. Store in the refrigerator.

I love meringue topping on my key lime versus whipped cream. I had it served that way to me in Key West and it was my all-time favorite!
