Key Lime Pie

Key Lime Pie

March 14th is the day we mark as #PiDay (3.14). To celebrate #PiDay, I made Key Lime Pie. I selected this pie for a number of reasons. I’m hosting a Lego Movie challenge with #FoodNFlix and the pies from Lego sets are typically cream pies. I also looked at pies from Disney and Key Lime stood out as this is popular in Florida. Lastly, I absolutely LOVE Key Lime Pie.

Key Lime Pie Recipe

The pie is actually quite simple to make. To make the graham cracker crust, crumble the graham crackers in a food processor. Add the sugar and melted butter and process until combined. Press the graham cracker mixture into the bottom and up the sides of a pie plate. Bake the crust for 8 minutes. While the crust is baking, whisk the sweetened condensed milk and key lime juice together. Pour into the pie crust. Last, using a stand mixer, whisk the egg whites and cream of tarter together. Slowly add the sugar until soft peaks form. Using a spatula, spread the meringue over the pie filling and bake.

  1. I love meringue topping on my key lime versus whipped cream. I had it served that way to me in Key West and it was my all-time favorite!

  2. Key lime pie is one of my favorites. It reminds me of when my daughter was little and I would finally get her bed and enjoy a slice.
