March 17 is National Irish Food Day, or National “Eat Like and Irishman” Day. St. Patrick’s Day is one of our favorite holidays. We have true Irish heritage, my husband is about half Irish. We like to celebrate by trying different Irish recipes each year. This year I decided to make Irish Cheese and Walnut Biscuits.
These biscuits are easy to make and are a great addition to a traditional Irish dinner. Serve these with stew or corned beef. To make the biscuits, combine the dry ingredients together. Cut in the cold butter with a pastry blender. Then add the buttermilk and stir until combined. I decided to make mine in a pie dish as this is just a quick shortcut and avoids the rolling and cutting step. You can do it that way as well. Last, sprinkle the cheese on top and then bake.

Irish Cheese and Walnut Biscuits
Cheesy and nutty, a great Irish bread to serve with your favorite Irish meal for St. Patrick's day.
Ingredients
- 2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- 2 tsp. dried sage
- 1/2 cup walnuts, chopped
- 1/2 cup cold butter, cut into 1/2 inch cubes
- 1 cup Irish cheese, shredded
- 2/3 cup buttermilk
Instructions
- Heat oven to 450° F and lightly grease a pie dish.
- In medium bowl, stir together flour, baking powder, baking soda, salt, pepper, sage and walnuts.
- Add butter to dry ingredients and cut in with a pastry blender or fork until mixture resembles coarse meal.
- Stir in 1/2 cup of the cheese.
- Add buttermilk and stir until mixture forms a ball.
- Spoon biscuit mixture into the prepared pie dish.
- Sprinkle with remaining cheese and press lightly into surface.
- Bake on center rack of oven for 10 to 12 minutes or until golden brown.

This sounds amazing. I have put cheese in biscuits but have never considered nuts. What a great idea.
