Healthy Chocolate and Fruit Pudding

A friend of mine introduced me to the idea of a healthy pudding years ago. She used fruits and avocados and spices to mix together a pudding that is in fact very good for you. When I received the Chocolate Silk Green Powder from Barlean’s, I immediately thought how great it would be in this dish and the result is Healthy Chocolate and Fruit Pudding. I decided to give it a Halloween flair by pureeing a banana and using that to pipe a spider web on top.

Healthy Chocolate and Fruit Pudding Recipe

The dish is very easy to bring together. I combined all ingredients in a food processor and processed until combined. You can adjust the chocolate powder, cinnamon and honey to adapt the taste to your liking. 

I have never used Barlean’s products before and I have found that I really like this product. I am not great at eating my greens and I love how I can easily add this to smoothies or even just a glass of milk and gain the health benefits. The taste isn’t exactly like chocolate but it’s very good and easy to combine with other flavors.

Yield: 4 servings
Prep Time: 10 minutes
Total Time: 10 minutes

Healthy Chocolate and Fruit Pudding using fruits, avocado and chocolate silk greens powder. You'll be surprised that this treat is good for you!

Ingredients

  • 1/2 avocado
  • 2 bananas
  • 1/2 cup frozen blueberries
  • 1 cup plain organic yogurt
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1 tsp. honey (or to taste)
  • 2 scoops Barlean's Chocolate Silk Greens Powder
  • optional: banana and lemon juice for spider web

Instructions

  1. Combine all ingredients in a food processor and combine completely.
  2. Spoon into a serving bowl, or individual servings.
  3. Puree banana and lemon juice. Spoon into a baggie and cut the tip off. Pipe circles over the top of the pudding. Drag a knife from outside edge to center for spider web effect.
