This month’s #BakingBloggers topic of the month is Vampires Beware! We’re Baking with Garlic! All those who participate in the challenge must bake with garlic as an ingredient. I decided on a family favorite, Garlic Cheesy Knots. These are soft, chewy, fresh baked bread sticks tied in knots and smothered in garlic and Parmesan cheese. Yum!

Garlic Cheesy Knots Recipe

Garlic Cheesy Knots

Garlic Cheesy Knots

Garlic Cheesy Knots are soft, chewy, freshly baked bread sticks tied in knots and smothered in garlic and Parmesan cheese.

Ingredients

  • 2 cups lukewarm water
  • 1 tbsp. sugar
  • 1 tbsp. active dry yeast or instant yeast; or 1 packet active dry yeast
  • 1 tbsp. salt
  • 2 tbsp. olive oil, optional
  • 5 1/2 to 6 cups all-purpose flour
  • 2 tbsp. butter, melted
  • 1/3 cup Parmesan cheese, to taste
  • 1 clove garlic, crushed
  • fresh chopped parsley, to taste

Instructions

  1. Dissolve the sugar, yeast, and salt in the lukewarm water (and olive oil, if you're using it).
  2. Add the flour, starting with 5 1/2 cups flour and adding more as necessary to make a soft, smooth dough.
  3. Knead the dough (with your hands, a mixer, or your bread machine set on the dough cycle) until it's smooth and elastic, about 7 to 10 minutes.
  4. Place the dough in a lightly greased bowl or other container, cover it, and let it rise for 1 to 2 hours, whatever fits your schedule.
  5. Gently deflate the dough, and divide it into four pieces. Roll each piece, on a floured surface, with a floured rolling pin, into a rectangle. Let the dough rest several times to relax it and make it more cooperative. Turn it over from time to time and roll the reverse side.
  6. Slice strips from the dough, and tie into knots, place on parchment lined baking sheets.
  7. Preheat your oven to 450°F. Bake the knots for 15 to 20 minutes, until golden brown.
  8. Brush each knot with a bit of butter and gently toss each knot in a bowl with the Parmesan cheese and garlic until covered. Continue until all the knots are done.
  9. Serve immediately.
