Coconut Lime Dressing

This Coconut Lime Dressing is light and a little sweet and sour. It goes wonderfully with fresh fruit or with any salad that contains fruit. I created this dressing to go with the Fields of Naboo salad from Tomorrowland. The menu called for a Citrus Vinaigrette but I wanted something a little more tropical. This was very popular with my family.
