November 18th marked the 90th birthday for Mickey Mouse. The Disney resorts are celebrating this milestone with #HappyBirthdayMickey and #GetYourEarsOn celebrations in the parks. This includes a bunch of fun new food items being offered. As we all know, everything tastes better when it’s shaped like Mickey! One of the items that I decided to create at home is the Chocolate Chip Mickey Muffin. This item comes from the Boardwalk Bakery at Walt Disney World.

When I saw this Mickey muffin mold, I knew I just had to have it. I can think of so many things that I want to make using this mold. There are so many Mickey shaped foods that have been introduced as part of the celebration. Be sure to subscribe to get new recipes each week and see what else I come up with using this muffin mold.

This is a simple and delicious recipe. First step is to mix all the ingredients together. You will want to spray the Mickey muffin mold with cooking spray and set the mold on a cookie sheet to stabilize it for moving. Next spoon the batter into the mold. I recommend about two thirds full. Then pop these in the oven for about 22 minutes until slightly golden. Pull them out of the oven and let them cool at least 5 minutes before removing the muffins. Repeat with the remaining batter. I plan to get a second muffin mold so I can just make them all at one time. Like I said, I have a lot of ideas for this and having two molds will come in handy.

Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

Inspired by Walt Disney World's Boardwalk Bakery to celebrate Mickey Mouse's 90th birthday.


  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 large egg slightly beaten
  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup semi-sweet chocolate chips
  • 1 tsp. almond extract
  • 1/4 cup raw sugar, if desired


  1. Heat oven to 375°F. Spray Mickey muffin pan with cooking spray. Set on cookie sheet.
  2. Combine milk, melted butter and egg in bowl. Add all remaining muffin ingredients except almond extract and chocolate chips; stir just until moistened. Gently stir in almond extract and chocolate chips.
  3. Spoon batter about 2/3 full into prepared muffin pan cups. Sprinkle with raw sugar, if desired. Bake 22 minutes or until golden brown. Cool at least 5 minutes before remove from pan.
