Blue Bayou Golden Beet & Arugula Salad

Blue Bayou Golden Beet & Arugula Salad is a dinner menu item at Disneyland’s Blue Bayou restaurant. It is described as arugula, goat cheese, strawberries, pickled red onions and pistachio served with sherry vinaigrette. A picture of the salad was shared on the Disney Parks Blog for the Valentines Day 2019 celebration. It looked so delicious I knew I had to make this. When #OurFamilyTable gave us the herbaceous recipe challenge, I knew it was the perfect time.

I made this for our families Easter lunch this year. The flavors sparked quite a bit of conversation. Arugula isn’t something many people eat in their salads regularly but everyone seemed to enjoy the peppery taste with the beets, strawberries and dressing. I opted for blue cheese instead of goat cheese just as a personal preference, but goat cheese would be great on this as well. Pickled onions are not a family favorite but could easily be added as well. I set out the salad ingredients individually so each person could choose what is on their salad.

After such a healthy and delicious salad, you could end your meal with the Blue Bayou Fantasia Cheesecake, it’s sinful!

Arugula

Arugula has wispy leaves with a peppery taste. They have a lot of nutrients and health benefits. According to Britannica, arugula is an herb, part of the mustard family. They are a good source of calcium, iron, and vitamins A, C, and K. According to LiveStrong, the health benefits of Arugula include healthy weight management, eye health, helping control blood pressure, heart health and possible protection against cancer.

Beets

According to numerous sources including WebMD, beets can provide a number of health benefits. The are rich in folate (Vitamin B) which can reduce birth defects, nitrates which can reduce blood pressure and help prevent glaucoma. It also may increase stamina for exercise. They are also high in fiber, packed with vitamins and minerals, such as potassium and vitamin C and contain antioxidants. They have anti-cancer properties and are anti-inflammatory, With all these great benefits, I’ve been working to add beets into our weekly menu for a while now.

How to prepare beets

Remove the roots and leaves from your beets. Put the beets into water. Brush the outside of the beet with a clean vegetable brush. They will look nice and red when done. There are two ways I will share to cook your beets.

The first is to boil water and add the beets. Make sure the beet is completely covered so it will cook evenly. Cook until they are tender. Depending on the size of your beets, the time will vary. My beet was very large and took about 35 minutes. Smaller beets may take only 20 minutes. Drain the beets under colder and remove the skins. You may need to scrap a bit with your nail to get them to come off but they should mostly just slip off.

The second way you can cook your beets is to bake them. Wrap each beet in foil and place on baking sheet. Bake in an oven at 400 degrees for about 20 minutes. Again, time may vary up to 45 minutes. You should be able to pierce the beet easily with a sharp knife when they are done. Once done, unwrap the beets. Peel the skin away with a knife. Your hands will get red from the beet juice. ūüôā

Once the beets are peeled and ready, cut thin slices. You can leave them in circle slices or cut into matchsticks or cubes.

Yield: 6 servings

Blue Bayou Golden Beet & Arugula Salad

Blue Bayou Golden Beet & Arugula Salad
Blue Bayou Golden Beet and Arugula Salad with peppery arugula, sweet strawberries, slightly sweet golden beets with blue cheese and pistachios. Serve with your favorite sherry vinaigrette dressing.

Ingredients

  • 4 cups arugula
  • 1 large golden beet
  • 1 cup strawberries, sliced
  • 1/2 cup pistachios
  • 1/4 cup blue cheese
  • sherry vinaigrette dressing

Prep Salad

Wash and spin dry the arugula and place in a large bowl.

Slice the strawberries,

Either place each ingredient in it's own bowl or toss into the arugula.

Serve with your favorite sherry vinaigrette dressing.

Notes

The Disneyland menu calls for goat cheese and picked onions which you can add if desired.
