Beorn’s Honey Nut Banana Bread
This recipe for Beorn’s Honey Nut Banana Bread inspired by Alison’s Wonderland Recipes #LiteraryTeaPartyTime giveaway (here) from her upcoming book A Literary Tea Party: Blends and Treats for Alice, Bilbo, Dorothy, Jo, and Book Lovers Everywhere by Alison Walsh. Alison participates in the Fandom Foodies group that I also take part in and shared this giveaway challenge and I thought it would be a lot of fun. I’ve followed along on her journey to write this cookbook and I’m excited to see the finished product.
I followed the recipe as Alison has it on her blog (below) and found the recipe very easy to follow and enjoyed that it was simple to make. I think I may have used a larger loaf pan than intended, but my bread turned out just perfect. My husband said it was yummy and he really liked it. I thought it was creative for Alison to use three different sweeteners in the recipe: granulated sugar, brown sugar and honey. The bread isn’t overly sweet but the hints of honey are present. I wasn’t sure what walnut chips were so I used chopped walnut pieces.
I enjoyed this recipe and plan to try the others she has shared as part of the challenge. Based on this recipe alone, I’m very interested in her book as I think it would make a good addition for anyone interested in recipes inspired by books or for a nice tea party.
