Banana Strawberry Parfait

This month the Fantastical Food Fight theme is Banana. I must admit this was more difficult for me that I thought it would be. Banana shows up in Banana Bread, and I’ve shared an amazing family favorite recipe for that. It also appears in banana muffins, banana cake (see my Banana Flip Cupcakes) or banana pie or smoothies. There are variations on these themes, but mostly, this is where you find bananas. I wanted to come up with something a little different and decided to make a homemade banana frozen yogurt and use it in a parfait, thus the invention of the the Banana Strawberry Parfait.

I truly love the result of this dish. The homemade banana frozen yogurt is so yummy. The strawberry sauce is fresh and bright. The whole thing is delicious with the benefit of being a pretty healthy dessert option. Plus they are beautiful and would look amazing on any brunch or dessert table. Because it’s frozen, just be sure to serve immediately so it doesn’t melt. 

Banana Strawberry Parfait Recipe

Banana Strawberry Parfait is a healthier dessert alternative using homemade frozen banana yogurt, homemade strawberry ice cream topping and fresh fruit.


Strawberry Ice Cream Topping

  • 1 pint fresh strawberries, chopped
  • 1/3 cup granulated sugar
  • 1 tsp. pure vanilla extract

Banana Frozen Yogurt

  • 3/4 cup whole milk
  • 1/3 cup granulated sugar
  • 4 cups low-fat or non-fat vanilla yogurt
  • 3 ripe bananas, mashed
  • 1 tsp. pure vanilla extract


  • 1/2 cup low-fat granola cereal
  • 3 cups sliced bananas and strawberries
  • sprig of mint, optional


Strawberry Ice Cream Topping

  1. Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. Mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup.
  2. Cook until the sauce thickens, about 15 minutes.
  3. Remove from heat. In a food processor or blender, puree the sauce. Store in refrigerator in an airtight container, like a canning jar with lid.

Banana Frozen Yogurt

  1. In a medium mixing bowl, using a hand mixer, combine the milk and granulated sugar until the sugar is dissolved, about 1 to 2 minutes on low speed.
  2. Stir in the yogurt, bananas and vanilla and combine.
  3. Pour mixture into freezer bowl of ice cream maker, cover and turn the machine on, let mix until thickened, about 20 to 25 minutes.
  4. Transfer to a freezer safe airtight container and freeze about 2 hours.
  5. Remove from freezer a few minutes before serving to allow it to soften enough to scoop.


  1. Combine strawberry ice cream topping with cut up bananas and strawberries, set aside.
  2. Scoop banana frozen yogurt into four parfait bowls. Top with strawberry topping, granola, the sauce covered fruit and fresh fruit. Sprinkle with granola. Serve with mint sprig, if desired.
