My cousin got married at her beautiful home in Montana overlooking her amazing views of the mountains. She had her reception catered at her home and one of my favorite dishes inspired these Antipasto Appetizers. When I heard that this month’s #ImproveCookingChallenge ingredients were olives and cheese, I just had to make this. These are incredibly easy to pull together and a wonderful make ahead option. You could also serve these with either a marinara or ranch dip to add even more flavor if desired.
First you cook the purchased tortellini and let them cool completely. You con’t want your hands to burn while putting these together. š To start putting together the appetizers, you fold one piece of salami in half and then in half again. You will have one quarter of a pie piece when done folding. Push the toothpick through the folded salami piece. Then add one tortellini and one black olive. Place on a serving platter. Repeat this until you have a full plate of appetizers. Cover with plastic wrap and place in the refrigerator until you are ready to serve. You may want to make extras and keep them in a refrigerator safe container as these go quickly and you may want to reload the plate during the party. Enjoy!

Antipasto Appetizers
Super easy and wonderfully tasty appetizer that can be made ahead and served cold. Perfect for any party!
Ingredients
- 28 slices salami
- 28 cheese tortellini
- 28 black olives
- toothpicks
Instructions
- Cook the cheese tortellini according to package directions. Cool completely.
- Starting with the salami, fold each piece twice and put on toothpick. Follow with one cheese tortellini and finish with a black olive.
- Repeat until all appetizers are complete.
- Chill until ready to serve.

Of course that would be delicious. You could easily add a little bowl of balsamic vinegar with a touch of olive oil for dipping.
