Slow Cooker Braised Pork

This Slow Cooker Braised Pork is a hearty meal that will leave you feeling satisfied. The recipe is inspired by the menu at Walt Disney World’s Be Our Guest restaurant. This slow cooker pork uses similar ingredients as Coq Au Vin. It is slow cooked on low heat for seven to eight hours. The meat is savory, rich, tender, and seasoned well. Our family enjoyed this meal after a long, busy weekend and our kitchen smelled amazing. This makes a great weeknight option as long as you have a little time in the morning to get it ready due to the long cook time.

Coq Au Vin Style eight hour slow-cooked pork roast with mushrooms, onions, carrots and bacon served with mashed potatoes

Ingredients
Braised Pork
  • 3.5 lb boneless pork shoulder butt roast
  • 3 to 4 pounds
  • 1 cup beef stock
  • 1 cup mushrooms trimmed, rinsed and quartered
  • ¼ cup onion cut into large pieces
  • 1 cup carrot cut into bite size rounds
  • 2 cup dry red wine
  • ½ cup bacon cooked and broken into pieces
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste
  • 1 bay leaf
  • ¼ tsp dried thyme
  • 2 cloves garlic crushed
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 3 tbsp all-purpose flour
Mashed Potatoes
  • 2 lb russet potatoes peeled and quartered
  • 2 tbsp butter
  • 1 cup milk
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste
Instructions
  1. Cook the bacon and place bacon and drippings into the slow cooker.
  2. Brown the pork in the pan with the bacon drippings on all sides until brown.
  3. Place all remaining ingredients except olive oil and flour into the slow cooker and
  4. cook for 7 hours on low heat setting.
  5. Remove pork and discard the bay leaf. Shred/cut into bite size pieces.
  6. Heat the olive oil in a saucepan over medium-high heat, stir in the flour, and cook
  7. until it forms a paste and just begins to turn brown at the edges. Stirring
  8. constantly, very slowly strain the liquid from the slow cooker into the saucepan
  9. and simmer until it has reduced to a consistency that’s thick enough to coat the
  10. back of the spoon.
  11. If desired, prepare mashed potatoes and then transfer the pork to serving dishes
  12. over the mashed potatoes and pour the sauce over the pork.
